It was at this stage that they discovered a shared love of driving vintage Italian scooters around their native New Zealand, listening to music, and most importantly, making and drinking great coffee.<\/p>\n\n\n\n<p>Nearly 30 years later and half a world away, that friendship is still going strong. And coffee is even more important. Because these days, Stewart and Wiig are the brains behind <a href=\"http:\/\/volcanocoffeeworks.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Volcano Coffee Works<\/a>, one of the leading roasteries in London\u2019s busy bean scene.<\/p>\n\n\n\n<p>But coffee in London is pretty different these days compared to when Stewart and Wiig first got there in the early \u201990s.<\/p>\n\n\n\n<p>\u201cThere\u2019s one or two things that New Zealand is ahead of the world on: playing rugby and coffee,\u201d says Wiig. \u201cComing to London, it was like, \u2018Where are the good coffee shops?\u2019 And\u2026nothing. We\u2019d make pilgrimages to Bar Italia because it was the only place you could buy an espresso in London.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"\/ideas\/wp-content\/uploads\/sites\/4\/2019\/06\/Two-Coffee-Loving-Friends-Lead-London\u2019s-Bean-Scene2-800x571.jpg\" alt=\"\" class=\"wp-image-18570\"\/><\/figure>\n\n\n\n<p>While Wiig was making his name as a cameraman reporting from war zones around the world, Stewart was working as a chef.<\/p>\n\n\n\n<p>\u201cPeople were starting to get into the idea of provenance with their food and wine,\u201d he says. \u201cYou\u2019d have this amazing meal, then they\u2019d serve this battery acid at the end of it. I couldn\u2019t believe it. I thought, \u2018There\u2019s an opportunity there.\u2019\u201d<\/p>\n\n\n\n<p>Stewart started roasting with a company in West London, eventually buying a broken down old roaster online, nursing it back to life and setting up his own roastery. In 2010, Wiig and his wife Emma were looking for an investment opportunity, and Volcano Coffee Works was born.<\/p>\n\n\n\n<p>\u201cEmma\u2019s the real brains behind the business,\u201d says Wiig. \u201cKurt and I are the creatives, coming up with the ideas. Without Emma, we wouldn\u2019t have got anywhere. We knew Kurt knew about coffee, and we saw the opportunity.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"\/ideas\/wp-content\/uploads\/sites\/4\/2019\/06\/Two-Coffee-Loving-Friends-Lead-London\u2019s-Bean-Scene3-800x571.jpg\" alt=\"\" class=\"wp-image-18571\"\/><\/figure>\n\n\n\n<p>The company now has a staff of 15 and supplies coffee to clients including The Providores in Marylebone, and Oblix, the restaurant on the 32nd floor of The Shard, London\u2019s tallest building. And now, of course, WeWork too.<\/p>\n\n\n\n<p>They roast in small batches only, using Arabica beans sourced directly from 17 small-scale farmers in Peru. Provenance is crucial to the company\u2019s ethical stance, explains Wiig.<\/p>\n\n\n\n<p>\u201cBy the time it\u2019s roasted by Kurt, it\u2019s probably been handled by 20 individuals,\u201d he says. \u201cThat\u2019s where our responsibility as a roaster is so important because when we can trace it right back to the farm, we know who we\u2019re buying it from, we know that we\u2019re paying a fair price for it, we know that they\u2019re getting looked after.\u201d<\/p>\n\n\n\n<p>There are four main Volcano blends to choose from, including the Mount, the house blend available at the 21 bean-to-cup machines at <a href=\"https:\/\/www.wework.com\/locations\/london\" target=\"_blank\" rel=\"noopener noreferrer\">WeWork London<\/a> locations. For Stewart, it\u2019s \u201ca stepping stone between old school and speciality.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img data-recalc-dims=\"1\" height=\"810\" width=\"1440\" decoding=\"async\" src=\"https:\/\/www.wework.com\/ideas\/wp-content\/uploads\/sites\/4\/2019\/06\/Two-Coffee-Loving-Friends-Lead-London\u2019s-Bean-Scene4.jpg?resize=1440%2C810\" alt=\"\" class=\"wp-image-18572\"\/><\/figure>\n\n\n\n<p>He adds, \u201cYou\u2019ve got lots of chocolate, caramel notes, not too much acidity, lots of sweetness, and a bit of fruit in there as well. It\u2019s a really good all-around coffee.\u201d<\/p>\n\n\n\n<p>And a reflection, he says, of the wider trend in this country around specialty roasting in recent years.<\/p>\n\n\n\n<p>\u201cThere\u2019s been a tendency to roast much lighter,\u201d says Stewart. \u201cAs a result, it\u2019s far more true to what the coffee beans themselves taste like. We\u2019ve gone as far as we can go really, and now it\u2019s being dialed back to something that\u2019s more palatable, less challenging to drink.\u201d<\/p>\n\n\n\n<p>The coffee isn\u2019t the only consideration. As a full-service roastery, Volcano is committed to the client side of things too, ensuring that baristas making and serving Volcano coffee in both restaurants and coffee shops know exactly what they\u2019re doing.<\/p>\n\n\n\n<p>\u201cA lot of people who start up caf\u00e9s or restaurants don\u2019t know a huge amount about coffee,\u201d says Wiig. \u201cIt\u2019s about bringing everybody along on a journey. And not only the caf\u00e9, but also the consumer of the end product.
