{"id":16443,"date":"2015-09-09T22:00:30","date_gmt":"2015-09-10T02:00:30","guid":{"rendered":"https:\/\/www.wework.com\/creator\/?p=16443"},"modified":"2020-03-30T18:28:04","modified_gmt":"2020-03-30T22:28:04","slug":"at-ellarys-greens-you-know-that-youre-cared-for","status":"publish","type":"post","link":"https:\/\/www.wework.com\/ideas\/community-stories\/member-spotlight\/at-ellarys-greens-you-know-that-youre-cared-for","title":{"rendered":"Serving up a fresh idea at Ellary\u2019s Greens"},"content":{"rendered":"<p>All throughout Leith Hill\u2019s life, she has been surrounded by unique food.<\/p>\n<p>She grew up in New Orleans, the city Mark Twain once said has food \u201cas delicious as the less criminal forms of sin.\u201d But Hill is no sinner.<\/p>\n<p>Hill\u2019s father made sure that she grew up with not just food, but a philosophy. \u201cHe was a brilliant lawyer,\u201d Hill remembers, \u201cbut he was passionate about food.\u201d Hill recalls fruit-infused cookies ordered special from California, brown rice \u201cin the \u201860s, when nobody had it,\u201d and making sure food \u201cdidn\u2019t just nourish\u2014making your calories count.\u201d<\/p>\n<p>So how do you make calories count? And what does that look like? The clearest visual aid can be seen in Hill\u2019s restaurant in the West Village, <a href=\"http:\/\/www.ellarysgreens.com\/\">Ellary\u2019s Greens<\/a>. It\u2019s less about being a restaurant, and more like a physical extension of the way this founder leads her life.<\/p>\n<p>If New York restaurants were in a galaxy, it would be a violent one filled with meteors and black holes destroying dreams daily. The turnover for restaurants in New York is astonishing: 80 percent of them fail in their first year, and 90 percent in their second. It makes the startup world seem like a positively safe bet, and it makes Ellary\u2019s Greens, which opened its doors in April 2013, feel like a lifer.<\/p>\n<p><a href=\"https:\/\/www.wework.com\/creator\/wework-creators\/at-ellarys-greens-you-know-that-youre-cared-for\/attachment\/20150902-ellarys-greens-41\/\" rel=\"attachment wp-att-16446\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"  wp-image-16446 alignleft\" src=\"https:\/\/www.wework.com\/ideas\/wp-content\/uploads\/sites\/4\/2019\/06\/20150902-Ellarys-Greens-41.jpg?resize=344%2C516\" alt=\"At Ellary\u2019s Greens, \u2018You Know That You\u2019re Cared For\u2019\" width=\"344\" height=\"516\" \/><\/a><\/p>\n<p>Hill is driven, and looks at you directly in the eyes when in discussion. She believes deeply in investing in the dining experience, even to the point where things wouldn\u2019t seem as profitable at first glance. Often, though, her innovations and profits go hand-in-hand by using recycled boxes for menus or cardboard for lighting fixtures. In addition, a refusal to use Styrofoam got Ellary\u2019s featured in <a href=\"http:\/\/www.msnbc.com\/msnbc\/new-york-citys-styrofoam-ban-goes-effect\">Mayor de Blasio\u2019s campaign<\/a> to ban the foam product earlier this year, leading to national exposure. \u201cFoam is a product of the past,\u201d Hill told MSNBC.<\/p>\n<p>What does the future look like? Hill goes deep on bacon, just to name an example: \u201cOur bacon is local, from a completely organic source in the Poconos. The farm is also sustainable, so no antibiotics, no hormones, and the pigs are free range. The farm is so large, and it\u2019s not even a range. It\u2019s huge. It\u2019s also the cleanest farm I\u2019ve ever been to in my life. In addition, they use a heritage breed pig, which means the breed is over 100 years old.\u201d<\/p>\n<p>From there, Hill brings the pork loin in-house and uses celery with it, which has enough \u201cnaturally curing nitrates to cure meat,\u201d she says. The celery is run through a juicer, mixed with spices, and it\u2019s used to cure the bacon for six days, and finally, it is smoked on location. If all that sounds like a lot, it is. Hill is focused on every inch of her restaurant, including her staff, a team of 38, which she describes as a \u201cfamily.\u201d<\/p>\n<p>That familial experience is crucial to eating at Ellary\u2019s Greens. There\u2019s a small, charming chalkboard sign near entrance that says there\u2019s no Wi-Fi but that patrons should feel free to talk to one another instead.<\/p>\n<p>One of the surprising facts of a Wi-Fi-free life is the number of computers Hill will see at her restaurant on any given day. Anyone who wants to work on a single project without the distractions of the Internet is welcome (there are also outlets at every table). Hill wants everyone to feel welcome at her restaurant, regardless of dietary obligations or restrictions. There\u2019s a universal feel to the food at Ellary\u2019s, but Hill\u2019s focus gives it such great specificity, right down to the tzatziki sauce on the salmon burger.<\/p>\n<p><a href=\"https:\/\/www.wework.com\/creator\/wework-creators\/at-ellarys-greens-you-know-that-youre-cared-for\/attachment\/20150902-ellarys-greens-3\/\" rel=\"attachment wp-att-16447\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"  wp-image-16447 alignleft\" src=\"https:\/\/www.wework.com\/ideas\/wp-content\/uploads\/sites\/4\/2019\/06\/20150902-Ellarys-Greens-3.jpg?resize=334%2C501\" alt=\"At Ellary\u2019s Greens, \u2018You Know That You\u2019re Cared For\u2019\" width=\"334\" height=\"501\" \/><\/a><\/p>\n<p>Although there\u2019s a small office downstairs at Ellary\u2019s Greens, when Hill needs to focus on her administrative work she settles into her office at <a href=\"https:\/\/www.wework.com\/locations\/new-york-city\/soho-west\">WeWork Soho West<\/a>. Hill has used various WeWork spaces since 2010 to run the accounting and business side of her restaurant, and its nearby locations means she and a few other team members can jump back and forth multiple times a day without breaking a sweat.<\/p>\n<p>And since Ellary\u2019s is expanding, they can expect the journey to continue. As the subway station at Columbus Circle is being built out, developers are looking to create what Hill calls a \u201cmini-Grand Central.\u201d Ellary\u2019s Greens is planning on creating something new in the space: a to-go option. Will there be any difficulties in adopting Ellary\u2019s personalized style to a quick-service model?<\/p>\n<p>\u201cYes&#8230;and no,\u201d says Hill. \u201cWhat\u2019s important is the experience you have when you walk into the restaurant. When you walk in, you know you\u2019re somewhere different.
