Beat the afternoon slump with SideChef’s energy truffles

The WeWork member has come up with lots of recipes to battle the afternoon slump, including this easy to prepare, perfectly packable treat.

Energy Truffles

According to SideChef contributor Elise Joan, a Los Angeles-based yoga instructor, this is “a perfectly portable treat for when you are on the go and need to keep your energy up. This recipe is super simple and quick to make.” Preparation time is 10 minutes.

Ingredients:

1 cup dates

1/3 cup toasted coconut

1/3 cup almond butter

1/4 cup oats

1/4 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup unsweetened cocoa powder

1/8 teaspoon ground cloves

Cooking instructions:

Process the dates (1 cup), toasted coconut (1/3 cup), almond butter (1/3 cup), oats (1/4 cup), cinnamon (1/4 teaspoon), and salt (1/4 teaspoon) in a food processor until it forms a dough.

In a small dish, whisk the unsweetened cocoa powder (1/4 cup) and ground cloves (1/8 teaspoon) together and set aside.

One tablespoon at a time, roll the dough into small balls.

Roll each ball in the cocoa powder mixture and enjoy! Store in the fridge for up to one week.
